Anna's recipe for Peachy Salom with green beans and squash

Peachy Salmon Ingredients

  • Salmon
  • Four fresh peaches
  • 1 tbsp rice vinegar
  • 2 tbsp honey
  • 1 tbsp olive oil
  • Dash of sea salt

Directions

  1. Preheat over to 350F
  2. Peel and slice peaches, place in a baking dish around the salmon.
  3. In a separate bowl, combine rice vinegar, honey, olive oil and salt, and top salmon and peaches with sauce.
  4. Bake for 15 minutes or until the fish is flaky.

Sauteed Green Beans and Yellow Squash Ingredients

  1. Fresh yellow squash, 2-3, large
  2. Fresh string beans, 2 handfuls
  3. 1 tbsp olive oil
  4. Dash of sea salt
  5. Garlic clove, pressed or diced

Directions

  1. Wash and chop squash and green beans.
  2. Add olive oil to sauce pan over medium heat. Add fresh garlic and cook for 1 minute.
  3. Add squash and green beans and cook for 5-8 minutes until beans are bright green and squash is tender.
  4. Add salt and pepper to taste.
